Mill

Mill

A hand-crank stone mill for grinding grain into flour.

Description

Two round stones on a low base, turned by a wooden handle. Sheaves cut in the field are fed in whole; the stones thresh the grain from the heads and grind it to the flour every loaf in the realm begins as.

Milling is slow, deliberate work — crank too fast and the meal comes out coarse and scorched — which is why the mill is where most cooks learn patience before they ever light a range.
