Description

Barley SheafBarley Sheaf threshed and ground between the stones until the awns are nothing but dust and what is left is a soft, pale tan powder — a slow grind, since the bristles clog the quern if they are fed in too fast.

Barley flour is heavier and less willing to rise than wheat, so the loaf it makes is squat and close-crumbed by nature rather than by mistake.
