Millet Flour

Milled from Millet Sheaf, whose tiny round seeds give themselves up to the stones more readily than any larger grain, this flour comes out a warm, sunny yellow flecked with paler meal.

It carries a faint nuttiness through the oven and keeps better than most, which is why the small speckled loaves it bakes turn up in packs bound for long journeys.
